The questions that decide it, before you ever look at a robot
Most robotics decisions go wrong at the beginning, not the end. Operators start by comparing models when they should be answering four questions about their own building.
What is the actual task? "Running food" and "bussing" are different jobs with different economics. A robot that runs plates from a pass to a section can compress a server’s steps. A robot that clears and returns bins does something else entirely. Vague scoping produces vague results.
Does your floor plan physically support it? Aisle widths, turning radii, thresholds, ramps, elevator use in multi-level rooms, host-stand congestion at 7pm. This is the single most common reason a deployment underperforms, and it is knowable in advance with a site walk.
What is the labor math on your wage rates? A payback model built on a national average wage is a marketing document. A payback model built on your rates, your hours and your daypart volume is a business case. The break-even hours are what matter, and they vary enormously between a 90-seat full-service room in Santa Monica and a fast-casual counter in Tempe.
What happens to the guest experience? In some concepts a robot reads as novelty and lifts the room. In others it reads as cost-cutting and costs you the thing you were selling. This is a positioning question and it deserves a real answer, not a shrug.

Front of house vs back of house — two different decisions
Front of house is where the category gets its attention: running, bussing, and in some rooms, guest-facing interaction. The economics here are about server steps, section sizes and turn times. The risks are about floor plan and brand fit.
Back of house is quieter and, for a lot of operators, more interesting. Fry automation, dish handling, prep equipment that is not marketed as robotics but functions as it. The economics here are about consistency, throughput at peak, and the injury and turnover profile of the jobs nobody wants to fill twice a year.
We assess both, and we do not assume the front of house is where you should start. In several engagements, the honest recommendation has been to leave the dining room alone and look at the kitchen.

A pilot design. If we recommend proceeding, we recommend proceeding small, with defined success criteria agreed before the unit arrives — so that "is this working?" has an answer that is not a matter of opinion.
A straight answer — including "not yet." We take no vendor commissions. There is no version of this engagement where we are paid more for telling you to buy something.
What changes on the floor — and how a crew takes it
The technical case and the human case are different cases, and the second one is where deployments usually fail.
Servers who were not consulted tend to treat a unit as either a threat or an obstacle, and a robot that gets routed around, parked in a corner or left uncharged produces exactly zero return regardless of how good the business case was. The rooms where this goes well share a few things: someone on the floor was involved before the unit arrived, the task it was taking over was one people were glad to hand off, and management was explicit and honest about what it did and did not mean for hours.
There is also a guest-facing dimension worth planning rather than discovering. Some rooms get genuine delight out of it, particularly with families. Some guests read it as a downgrade in service, and in a fine-dining context that reading can be expensive. We work through the positioning with you — including how your team introduces it at the table — before anything gets ordered.

How much does a restaurant service robot cost?
Street pricing varies widely by unit and by whether you buy or lease, and vendors quote differently depending on service terms. We publish current street pricing across six units in our buyer’s guide rather than quoting a single number here, because a single number would be misleading.
Will a robot let me cut a server?
Usually not directly. The realistic outcome in most full-service rooms is larger sections or fewer steps per server, not a headcount reduction. Anyone promising you a straight labor swap is selling.
Can my dining room physically handle one?
That is exactly what the site walk determines. Aisle width and thresholds disqualify more rooms than operators expect.
What about back of house automation?
Often the better starting point, particularly for high-volume kitchens with hard-to-fill stations. We assess both.
Do you sell or install the robots?
